Stages of cooking
-
Turkey breast with a whole 1.5 kg piece will be the best. Prepare a solution of sea salt and cold water. Allow salt to completely dissolve in water. Put the meat in a saucepan, pour in saline (if necessary, add a little water so that it covers the meat) and leave for 2-3 hours.
-
Peel and chop the garlic. Wash the meat, dry it with a paper towel and stuff it with garlic over the entire surface, making shallow cuts with a sharp knife blade.
-
Prepare marinade: mix coriander, paprika, chili, black pepper and herbs de Provence in a small bowl. Add mustard, soy sauce, Extra Virgin oil and mix thoroughly. Use the mixture to rub the turkey from all sides, rubbing the marinade into the meat with your hands.
-
Put the meat in a bowl or pan, cover and place in the fridge for a day.
-
Turn on the oven to warm up to 250 degrees. Put the turkey on a baking sheet covered with foil and put in a hot oven. The temperature is immediately reduced to 200 degrees. Bake for 50-60 minutes. If the top starts to redden too much cover the meat with foil. Then let the baked turkey ham cool completely in the oven and serve.
