A vibrant green sauce made from fresh parsley and cilantro, popular in South American and Mexican cooking, perfect for meats, fish, or as a plant-based dipping sauce.
Ingredients
- fresh parsley leaves: 1 cup (loosely packed, about 1 bunch)
- fresh cilantro leaves: 1 cup (loosely packed, about 1 bunch)
- garlic: 4 clove (minced)
- extra-virgin olive oil: 0.5 cup
- red wine vinegar: 0.25 cup
- salt: 0.5 tsp
- freshly ground black pepper: 0.25 tsp
- red pepper flakes: 0.25 tsp

In a food processor, combine the parsley, cilantro, and garlic, and pulse once or twice.

Add the olive oil, vinegar, salt, black pepper, and red pepper flakes, and pulse until smooth, using a rubber spatula to scrape down the sides as needed.
