- light olive oil: 1 Tbsp
- garlic: 2 clove (minced)
- tomatoes: 1 can (14.5 ounce can, diced)
- vegetarian ground beef crumbles (such as MorningStar Farms® Griller's Recipe Crumbles®): 1 pack (12 ounce pack)
- taco seasoning: 1 pack (1 ounce pack)
- lettuce: 6 cups (shredded)
- non-fat cottage cheese: 2 cups
- non-fat cheddar cheese: 1 cup (shredded)
- taco sauce: 2 Tbsp (to taste)

Heat olive oil in a skillet over medium-high heat. Saute garlic in hot oil until fragrant and slightly softened, about 2 minutes. Add diced tomatoes, vegetarian ground beef crumbles, and taco seasoning; cook and stir until tomatoes are soft, about 10 minutes.
