Who doesn’t like melons? It seems like there are no people, who don’t eat this fruit. And it is no wonder, because melons are aromatic, juicy and so delicious! If you are a fan of this fruit as well, then the recipe of melon cupcakes will certainly appeal to you!
Ingredients
- cottage cheese: 500 g
- sugar: 350 g
- milk: 2 Tbsp
- melon: 300 g
- egg: 2 piece
- butter: 60 g (melted)
- flour: 0.75 cup
- semolina: 0.75 cup
- vanilla essence: 3 tsp
- baking powder: 1 Tbsp
- cream: 1 cup (dense)

Take cottage cheese, 0.5 cup of sugar, milk, 115 g of melon and eggs.

Blend the ingredients to get a smooth mass and pour it into a deep bowl.

Add melted and cooled butter and mix the mass once again.

Now, add flour, semolina, vanilla essence and baking powder.

Mix everything well one more time. If you don’t have semolina at hand, you can replace it with flour.

Spoon the batter into cupcake forms, leaving ¼ of free space. Bake in the pre-heated to 180 C (350 F) for about 20 minutes.

Leave the cupcakes to cool down.

Now, whip the cream, add 1/3 cup of sugar, 1 teaspoon of vanilla essence and thoroughly mix the mass.

Spread the cream on the cupcakes and decorate them with melon pieces or any other elements. Bon appétit!
