This mincemeat cookie recipe was handed down to me by my great-grandmother. If you like Christmas mince pies, you'll love these mincemeat cookies!
Ingredients
- ½ cups packed brown sugar: 1 piece
- butter: 1 cup
- egg: 1 piece
- prepared mincemeat pie filling: 2 cups
- ¼ cups all-purpose flour: 3 piece
- salt: 0.25 tsp
- ½ teaspoons baking soda: 1 piece

Preheat the oven to 425 degrees F (220 degrees C). Grease cookie sheets.

Beat brown sugar and butter together in a large mixing bowl with an electric mixer until light and fluffy; add egg and mix well. Stir in mincemeat.

Sift together flour, salt, and baking soda together; stir into mincemeat mixture.

Drop by teaspoonfuls, about 2 inches apart, on prepared cookie sheets.

Bake in the preheated oven until edges are golden brown, about 7 to 10 minutes.
