Mornings can be hectic and skipping breakfast is not a wise option. Overnight oatmeal flavored with pineapple, banana, and pecans is an awesome way to start the day. It's a healthy, quick-and-easy, nutrient packed, make-ahead breakfast ready when you are.

Ingredients

  • old fashioned rolled oats: 2 cups
  • 1/2 cups unsweetened almond milk: 1 piece
  • (8-ounce) can crushed pineapple in pineapple juice: 1 piece
  • vanilla extract: 0.5 tsp
  • cardamom: 0.5 tsp (optional)
  • salt: 0.125 tsp
  • bananas: 2 piece (sliced)
  • toasted pecans: 0.25 cup (to taste, chopped)

  1. Combine oats, almond milk, pineapple and its juice, vanilla, cardamom, and salt in a bowl. Stir well, and spoon out into half-pint jars. Cover jars with lids, and refrigerate overnight.

  2. The following morning, stir in bananas, top with pecans, and enjoy.
