Pineapple fried rice with an Asian accent goes well with many things. Perfect alongside chicken and beef, but equally good with salmon, shrimp, or scallops. This comes together quickly, so get all of your ingredients prepped before you start cooking.
Ingredients
- vegetable oil: 2 Tbsp
- sweet onion: 0.5 cup (diced)
- ginger root: 1 Tbsp (grated)
- clove garlic: 1 piece (minced)
- ½ cups fresh pineapple chunks: 1 piece
- red bell pepper: 0.5 piece (diced)
- frozen peas: 0.33333 cup (thawed)
- cold, cooked white rice: 2 cups
- low-sodium soy sauce: 2 Tbsp (to taste)
- sesame oil: 1 tsp
- green onion: 2 Tbsp (sliced)
- sesame seeds: 1 tsp (toasted)

Heat oil in a large skillet over medium heat. Cook and stir onion in hot oil for about 1 minute. Add ginger and garlic; cook, stirring constantly, for 1 minute.

Increase heat to medium-high; add pineapple, red bell pepper, and peas. Cook, stirring constantly, for 3 to 4 minutes. Stir in rice and soy sauce; cook until sauce is well incorporated, 1 to 2 minutes. Stir in sesame oil and remove from heat.
