Ingredients
- chicken broth: 2 cups
- quinoa: 1 cup
- vegetable oil: 2 tsp (or as needed)
- onion: 0.5 piece (chopped)
- garlic: 2 clove (to taste, minced)
- ½ pounds ground chicken: 1 piece
- ½ (10 ounce) cans diced tomatoes with green Chili peppers (such as RO*TEL®): 1 piece
