This is a very colorful, beautiful and light salad. This vegetarian salad is so fresh, it is full of vitamins and health ingredients. This salad is a nice choice for a healthy snack. You should try it!
- green onion : 50 g
- chili pepper : 1 piece
- sweet pepper : 1 cup
- corn : 1 cup
- beans : 400 g (black)
- salt : 1 tsp
- lemon juice : 5 Tbsp
- quinoa : 1 cup
Stages of cooking
Whisk lemon juice, salt, garlic, coriander and caraway seeds. This is the sauce.
Continue to whisk adding olive oil until it becomes as smooth as possible. Add black pepper up to yor taste and set aside.
Rinse quinoa properly with running water several times.
Take a pan, pour in for about 6 cups of water, place in quinoa and boil during 10 minutes.
When it is ready, place it into the sieve. Take a steamer, pour in little water and boil, put sieve with quinoa on it and cover with a lid. Cook during 10 minutes, then stir and cool.
In a large bowl mix quinoa, green onion, beans, corn, chopped pepper and chili.
Mix properly and dress with the sauce.
Cool the quinoa salad and serve. Enjoy the meal!
