This Rainbow Vegetarian Pad Thai is packed full of colorful veggies and tossed in a deliciously tangy and sweet sauce. It’s the perfect vegetarian alternative to classic pad thai and makes for a healthy and flavorful weeknight meal.
Ingredients
- ounces of brown rice noodles: 4 piece
- red bell pepper: 1 piece (sliced)
- carrots: 2 piece (shredded)
- zucchini: 1 piece (julienned)
- yellow bell pepper: 1 piece (sliced)
- green onions: 2 piece (chopped)
- handful of fresh cilantro: 1 piece (chopped)
- handful of fresh basil: 1 piece (torn)
- vegetable oil: 3 Tbsp
- garlic: 3 clove (minced)
- hot sauce (like Sriracha): 1 Tbsp
- brown sugar: 2 Tbsp
- soy sauce: 3 Tbsp
- lime: 1 piece (juiced)

Cook the noodles according to the package instructions. Drain and set aside.

Heat the oil in a large skillet over medium heat. Add the red and yellow bell peppers, carrots, and zucchini. Stir-fry for a few minutes until tender-crisp.

In a small bowl, whisk together the garlic, hot sauce, brown sugar, soy sauce, and lime juice.
