Roasting whole garlic bulbs is an easy and delicious method. The sweet, soft cloves can be used in countless ways.

- garlic bulbs: 2 piece (whole)
- extra-virgin olive oil: 2 Tbsp

Preheat the oven to 400°F.

Remove most of the papery skin surrounding the garlic bulbs, but leave the skin on individual cloves so that the bulb remains intact. Using a sharp knife, cut ½ inch off the top of the cloves. Place each bulb on a square of aluminum foil. Drizzle 1 tablespoon of olive oil onto the cloves of each bulb, using your fingers to rub it over the cut surfaces. Wrap the bulbs in the aluminum foil.

Roast for 30 to 40 minutes, or until the bulbs feel soft. Let cool. Using a spoon, remove the roasted cloves or squeeze them out with your fingers.
