The name of this Mexican dish is “Sopa Seca de Fideo”, which is translated as “dry soup with noodles”. The dish, however, is not a soup, but it’s got its name due to the fact that the noodles the dish contains absorb all the delightful rich stock, making them very delicious and unusual! Ingredients
- angel hair nests: 3 piece
- olive oil: 0.25 cup
- onion: 0.5 piece (chopped)
- tomatoes: 2 piece (fresh, peeled and chopped or 0.5 cup crushed canned tomatoes)
- chicken broth: 2 cup
- salt: 0.5 tsp
- black pepper: 1 pinch

Take a deep frying pan and make the layer of angle hair nests in it.

Add oil and brown the ingredient. Then remove them from the pan.

Sauté chopped onions in the same frying pan for about 5 minutes until they become light brown.

Add chopped tomatoes, chicken broth, salt and black pepper to your taste.

Now, you can start cooking angel hair nests in the broth, which should already start simmering. Put the nests into the broth and rotate them from time to time to let them soak the broth well from all the sides. Keep simmering on medium fire for about 5-7 minutes.

Remove the noodles from the fire and let them stay for about 5 minutes more. Serve hot! Enjoy!
