This Mexican-inspired breakfast burrito recipe makes a large batch of fixings. My wife and I love eating Mexican, so I came up with this recipe for more variety in our morning meals. We are busy and don't have time to make elaborate meals in the morning. In the past, we have bought frozen breakfast burritos, but they are not very tasty, and I knew they could be improved.
Ingredients
- eggs: 12 piece
- milk: 0.66667 cup
- salt: 0.5 tsp
- butter: 2 Tbsp
- bulk pork sausage: 1 pound
- garlic: 2 Tbsp (minced)
- red onion: 0.5 piece (diced)
- tomato: 1 piece (diced)
- fresh cilantro: 0.25 cup (chopped)
- jalapenos: 1 can (3.5 ounce can, diced, optional)
- taco seasoning: 1 pack (1 ounce pack)
- ½ cups shredded Cheddar cheese: 1 piece
- flour tortillas: 20 piece (6 inch)

Heat the same large skillet over medium heat. Cook and stir sausage and garlic in the hot skillet for 5 minutes, Add onion; continue to cook and stir until sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Dotdash Meredith Food Studios

Transfer sausage to eggs in the bowl. Stir in tomato, cilantro, jalapeños, and taco seasoning until well combined. Allow mixture to cool to room temperature, then stir in Cheddar cheese. Dotdash Meredith Food Studios

Lay a tortilla onto your work surface, then spoon some of the egg filling halfway between the bottom edge and the center of tortilla. Flatten filling into a rectangular shape with the back of a spoon. Fold the bottom of tortilla snugly over filling, then fold in the left and right edges.
