Saute from squid is a healthy seafood recipe that will allow you to take a fresh look at this wonderful product. We have long known that squid themselves are unusually rich in vitamins and minerals that are easily digested. But they are even more valuable because they remain completely dietary.

Ingredients

  • squid: 700 g
  • onion: 80 g
  • celery stalk: 80 g
  • sweet pepper: 200 g
  • olive oil: 6 Tbsp
  • white wine: 200 ml
  • vegetable broth: 85 ml
  • garlic: 3 clove
  • black pepper: 1 pinch
  • parsley: 10 g
  • salt: 1 Tbsp

  1. Wash and clean squid from cartilage and pelts. If you use large squids, then you need to cut them in large chunks. If the squids are small, you can cook them entirely.

  2. Peel the onion, wash the pepper and celery. Onions and celery finely chop. Heat half of olive oil in a frying pan and fry onion and celery for 5 minutes until they are a little soft.

  3. Peel sweet pepper from partitions and seeds and cut into large strips. Add pepper to vegetables, stir and pour 125 ml of white dry wine (be careful! The mixture can boil and splash). When wine boils away, add vegetable broth or water. Let the liquid almost evaporate, then salt and pepper. Remove from heat.

  4. Crush three slices of garlic in the skin with the flat side of a knife. Heat the remaining olive oil in another pan, put garlic cloves in the skin. Well warm up everything. Splash 85 ml of white dry wine (carefully! It can splash!), Let it boil and remove the garlic.

  5. Increase the heat to the maximum, put the squid in oil, where the garlic was fried, salt, pepper and sprinkle with chopped parsley. Cook for 2-3 minutes. The main thing - do not overcook squid, otherwise they will become tough. Before serving, combine vegetables with squid, stir.
