If you really want something cold and light during summer heat, then by all means try to make this wonderful strawberry dessert.

  • strawberries : 500 g
  • egg : 2 piece
  • honey : 50 g
  • cream : 300 ml (30% fat)

  1. Prepare ingredients.

  2. Chop strawberriens in a blender. Separate the whites from the yolks.

  3. Pour some water into a small saucepan and set on moderate heat. Heat the water and put a bowl of yolks on top so that the bottom of the bowl does not come into contact with water in a saucepan. On the water bath, stir the yolks actively and continuously for 1.5-2 minutes so that the mass turns out to be slightly white. Stir actively so that the yolks do not coagulate. Set aside.

  4. Whisk whites  to a thick, stable mass. Add honey and whisk again.

  5. Add the yolks to the strawberry puree, then the whites. All mix gently until smooth.

  6. Whisk cold fatty cream with a mixer until stable peaks so that they increase in size and are not liquid.
