Awesome stuffed tomatoes with rice, mozzarella cheese and pesto sauce. If you are a fan of Mediterranean cuisine then this recipe is for you.
Cook the rice and warm up the oven to 200C.
Cut off the tops of tomatoes.
Dig out the insides with a teaspoon.
Сut mozzarella into cubes, chop spinach. Mix rice, mozzarella, spinach, pesto sauce and the inside from 3 tomatoes in a bowl. Ad salt and black pepper.
Stuff the tomatoes.
Sprinkle the tomatoes with olive oil and, if desired, sprinkle with parmesan.
Bake for 20 minutes until the tomatoes are soft.
