This sweet potato sheet cake is a delicious cake, and perfect for company. They will think you spent all day baking. It’s super easy to make and quick to bake, thanks to a box mix and mashed canned sweet potatoes.

- (16.5-ounce) yellow cake mix: 1 piece
- sweet potatoes, drained and: 1 can (15 ounce can, mashed)
- eggs, at room temperature: 3 piece
- buttermilk, at room temperature: 0.75 cup
- vegetable oil: 0.5 cup
- nuts: 0.75 cup (chopped)
- ounces Neufchâtel cheese: 6 piece (softened)
- butter: 0.5 cup (softened)
- powdered sugar: 2 cups
- vanilla extract: 1 tsp
- nuts: 0.25 cup (chopped)

Preheat the oven to 350 degrees F (180 degrees C). Spray a 9x13-inch pan with nonstick cooking spray. Set aside.

Whisk together cake mix, sweet potatoes, eggs, milk, and oil in a bowl. Stir in 3/4 cup nuts; spread evenly into the prepared pan.

Bake in the preheated oven until a toothpick inserted near the center comes out clean, 25 to 30 minutes. Remove to cool on a wire rack.

Beat Neufchâtel cheese, butter, and vanilla together in a bowl with an electric mixer. Add powdered sugar and beat until well combined. Spread frosting evenly over cake and sprinkle with the 1/4 cup chopped nuts. Cook’s Note Cream cheese can be used in place of Neufchâtel cheese.
