- tortillas: 4 piece
- brown rice: 1 cup
- black beans: 2 cups
- corn: 1 cup
- bell peppers, sliced thinly: 2 piece
- onion, sliced thinly: 1 piece
- garlic: 2 clove (minced)
- vegan cheese: 1 cup
- olive oil: 2 Tbsp
- salt and pepper: (to taste)
- cilantro: (for garnish, fresh)

Cook the brown rice according to the package instructions.

In a large pan, heat 1 tbsp of olive oil over medium heat. Sauté the onion, bell peppers, and garlic until soft.

Rinse and drain the black beans. Add them to the pan along with the corn. Season with salt and pepper. Cook for a few more minutes until everything is well combined.

Warm the tortillas on a dry pan to make them more pliable.

Assemble the burritos: divide the rice, the vegetable mixture, and the vegan cheese among the tortillas. Fold in the sides, and roll up the tortillas.

Heat the remaining 1 tbsp of olive oil in a pan and place the burritos seam side down. Cook for a few minutes on each side, until they are golden and crispy.

Garnish with fresh cilantro before serving.
