Vegetable Curry is the dish, which involves vegetables and does not contain any meat or eggs. This is a great solution for vegetarians, who wish to get the most out of their meals. The dish is easy and quick to cook and it will certainly come up to your taste!
Ingredients
- vegetables: 700 g (you can take any vegetables you like, including carrots, cabbage, bell pepper, potatoes, zucchini, egg-plants etc.)
- almond: 100 g
- coconut milk: 250 ml
- onion: 1 piece (large)
- ginger: 10 g (fresh)
- garlic: 2 clove
- Powdered coriander: 1 tsp
- saffron: 1 tsp (powdered)
- turmeric: 1 tsp (powdered)
- chili pepper: 1 tsp (powdered)
- oil: 6 Tbsp

Heat 1 tablespoon of oil on a frying pan and fry the spices for about 15 seconds, while stirring them

Chop the vegetables to make all the pieces equal in size. Mix the vegetables

Separately, mix the chopped onion, garlic and sliced ginger. Fry in two tablespoons of oil for about 5 minutes

Add spices and almonds. Reduce the fire to the minimum and continue frying for 5 minutes more

Take another frying pan and heat the rest of oil. Fry the vegetable mixture for about 5-7 minutes
