Have you ever tasted Viennese apple pie? If not, then it is high time to bake it! This Austrian dessert is so delicious and aromatic that you won’t be able to resist the temptation to eat the whole pie!
Ingredients
- milk: 150 ml
- vanillin: 1 g
- flour: 160 g (60 g for the dough and 100 g for the crumbs)
- butter: 120 g (60 g for the dough and 60 g for the crumbs)
- egg: 3 piece (separate the yolks from the whites in advance)
- sugar: 200 g (100 g for the dough and 100 g for the topping)
- apple: 700 g (peeled)
- apple juice: 300 ml (can be replaced with tangerine juice)
- lemon juice: 2 Tbsp
- water: 100 ml
- corn starch: 50 g
- cinnamon: 0.5 tsp
- sugar powder: 35 g
- almond: 50 g (chopped)

Add vanillin to the milk and boil it. Then melt the butter and add flour to it. Mix everything well and add the mixture into the hot milk

Cook choux paste on small fire

Wait until the dough cools down a bit and add egg yolks. Knead the dough well each time you add a yolk

Whip the egg whites with sugar

Add the whipped egg whites to the dough and knead it once again

Spread the dough on the bottom of the baking form covered with baking paper. Bake in the oven heated to 180 degrees for about 25-30 minutes

Now, let’s cook the topping. Slice the apples, add lemon juice to prevent them from getting brown

Dissolve starch in water. Warm up apple juice, add sugar, cinnamon and water with the dissolved starch. Then add apples, boil everything for about 5 minutes

Pour the topping on the base of your pie

Cook the crumbs for the pie. Mix 60 g of butter, 100 g of flour and sugar powder

Mash the mixture in your hands until it turns into crumbs, add almond and put into the baking form covered with baking paper. Bake in the oven until it becomes golden. Do not forget to mix the crumbs while they are in the oven

Roll out the crumbs

Dredge the apple pie with the crumbs and remove it from the baking form. Add a bit of sugar powder and cut into pieces. The taste as well as the look and aroma are just fantastic! Enjoy the dessert!
