Ingredients

  • seedless watermelon: 6 cups (cubed)
  • mint leaves: 50 piece (fresh)
  • limes: 5 piece (juiced)
  • white rum: 1 cup
  • simple syrup: 0.66667 cup
  • ice cubes: 2 cups (or as needed)
  • club soda: 1 cup (or as needed)

  1. Place watermelon cubes into a blender and blend until smooth. Pour into a bowl through a mesh strainer to remove pulp. Measure 2 cups strained watermelon juice and set aside.

  2. Place mint leaves into the bottom of a pitcher. Pour in 1/2 of the watermelon juice; muddle mint leaves with a muddler or the bottom of a wooden spoon.

  3. Pour in remaining watermelon juice, lime juice, rum, and simple syrup. Fill the pitcher with ice and top with club soda. Serve.
