Egg salad that is easy to make and isn't boring. Horseradish, green onion, Dijon mustard, paprika, and celery make this a welcome addition to any lunch.

Ingredients

  • hard-boiled eggs: 3 piece (peeled)
  • stalk celery: 1 piece (chopped)
  • green onion: 1 piece (chopped)
  • reduced-fat mayonnaise: 3 Tbsp
  • Dijon mustard: 1 Tbsp (to taste)
  • yellow mustard: 1 Tbsp
  • prepared horseradish: 0.5 tsp (to taste)
  • paprika: 0.5 tsp

  1. Mash hard-boiled eggs in a salad bowl with a fork. Stir celery and green onion into mashed egg.
