I came up with these air fryer beef kofta kabobs when I had a craving for kofta but it was pouring down rain. It is so easy to prepare and the air fryer gives it a nice grill-like char. If you are using bamboo skewers, soak them in water for 20 minutes before adding the meat.
Ingredients
- ground beef: 1 pound
- yellow onion: 0.25 cup (minced)
- fresh parsley: 0.25 cup (chopped)
- garlic: 2 clove (minced)
- ground cumin: 1 tsp
- ground coriander: 1 tsp
- salt: 1 tsp
- black pepper: 0.25 tsp (freshly ground)
- ground cinnamon: 0.25 tsp
- (6-inch) skewers: 8 piece
- plain Greek yogurt: 1 cup
- cucumber, squeezed dry with paper towels: 0.5 cup (grated)
- clove garlic: 1 piece (minced)
- lemon juice: 1 tsp
- dill: 0.25 tsp (dried)
- kosher salt: 0.25 tsp

Place ground beef, onion, parsley, 2 cloves minced garlic, cumin, coriander, salt, black pepper, and cinnamon in a large bowl. Mix until evenly combined.

Divide mixture into 8 portions and form into oval-shaped patties around the skewers, making sure the point of the skewer is covered. Place kabobs on a plate and place in the refrigerator.

Preheat an air fryer to 370 degrees F (188 degrees C).

Meanwhile, stir yogurt, cucumber, 1 clove minced garlic, dill, and Kosher salt together in a small bowl. Refrigerate until ready to use.

Place 4 kabobs in the basket of the air fryer. Cook for 10 minutes. Transfer kabobs to a plate. Repeat with remaining kabobs. Serve with tzatziki sauce.
