These Asian-inspired beef and asparagus noodles are fresh, healthy, and delicious!
Ingredients
- ounces rice noodles: 14 piece
- apple cider vinegar: 0.25 cup
- lime, zested and: 1 piece (juiced)
- brown sugar: 2 Tbsp
- chili powder: 0.5 tsp
- garlic: 4 clove (minced)
- vegetable oil: 2 tsp
- ground beef: 1 pound
- Chinese five-spice powder: 0.5 tsp
- salt: 0.5 tsp
- bunch asparagus, trimmed and: 1 piece (cut into 3-inch pieces)
- fresh ginger: 1 Tbsp (minced)
- fresh cilantro: 0.25 cup (chopped)
- unsalted peanuts: 0.25 cup (chopped)

Place noodles in a large bowl and cover with hot water. Set aside until noodles are softened, about 15 minutes.

Meanwhile mix vinegar, zest and juice of lime, brown sugar, and chili powder in a small bowl for the sauce; set aside.

Heat oil in a skillet over medium-high heat. Add beef, five-spice powder, and salt. Cook and stir until browned and crumbly, about 5 minutes.

Add asparagus, garlic, and ginger into the skillet; cook and stir until asparagus is bright green, 1 to 2 minutes.

Drain noodles; combine noodles, beef mixture, and sauce, and toss to coat. Sprinkle with peanuts and cilantro to serve.
