These air fryer shrimp fajitas are simple to make. Garnish with guacamole and cilantro if desired.

Ingredients

  • uncooked medium shrimp: 1 pound (peeled and deveined)
  • fajita seasoning mix: 1 pack (1.12 ounce pack, divided)
  • olive oil: 3 Tbsp (divided)
  • red bell pepper, sliced into thin strips: 1 piece
  • green bell pepper, sliced into thin strips: 1 piece
  • red onion, sliced into thin strips: 1 piece
  • flour tortillas: 4 piece (10 inch, toasted)

  1. Preheat an air fryer to 400 degrees F (200 degrees C).

  4. Place vegetables in the basket of the preheated air fryer and cook for 12 minutes, shaking halfway through the cook time. Transfer mixture to a large bowl.
