This easy split pea soup recipe made with dried yellow and green split peas is really tasty and high in fiber. It sticks to your ribs! Use vegetable broth to make it vegan.

Ingredients

  • olive oil: 1 Tbsp
  • onion: 2 cups (chopped)
  • carrot: 2 cups (chopped)
  • celery: 2 cups (finely chopped)
  • ½ teaspoons minced garlic: 1 piece
  • yellow split peas: 1 cup
  • green split peas: 1 cup
  • fat-free chicken broth: 8 cups
  • ½ teaspoons salt-free seasoning blend (such as Mrs. Dash®): 1 piece
  • salt: 1 tsp

  1. Heat oil in a Dutch oven over medium heat. Add onion, carrot, celery, and garlic; cook and stir until onion is translucent, 5 to 7 minutes. Stir in broth, split peas, and seasoning blend; cover and bring to a boil. Reduce the heat and simmer, stirring frequently, until peas are tender, about 2 1/2 hours. Purée with an immersion blender and serve.
