This BLT pasta salad with chunks of tomato, crispy bacon, and lettuce smothered in ranch dressing is an easy but delicious salad that I'm always asked to bring to potlucks. It is full of flavor!
Ingredients
- medium shell pasta: 1 pack (16 ounce pack)
- bacon: 1 pound (sliced)
- ripe Roma tomatoes: 4 piece (diced)
- red onion: 1 piece (chopped)
- ranch dressing: 1 cup
- black pepper: 0.5 tsp (freshly ground)
- head romaine lettuce, shredded (about 3 cups): 1 piece

Bring a large pot of lightly salted water to a boil. Add pasta, and cook until tender, about 8 minutes. Drain, and rinse under cold water to cool.

Meanwhile, cook bacon in a large deep skillet over medium-high heat until browned and crisp. Remove from the pan and drain on paper towels; crumble and set aside.

Combine pasta, 3/4 of the bacon, tomatoes, onion, ranch dressing, and pepper in a large bowl; toss to coat. Mix in lettuce. Top with remaining bacon.
