- butternut squash: 3 cups (shredded)
- sharp white Cheddar cheese: 1 cup (shredded)
- all purpose flour: 0.66667 cup
- eggs, lightly: 2 piece (beaten)
- 1/2 teaspoons chopped fresh thyme: 1 piece
- salt, plus more for sprinkling: 0.5 tsp
- black pepper: 0.25 tsp (freshly ground)
- vegetable oil: 2 Tbsp (or more if needed)
