This Chinese chicken soup with ramen noodles is spiced with turmeric, ginger, and chile paste. A filling and delicious way to use leftover chicken.

Ingredients

  • sesame oil: 2 Tbsp
  • fresh ginger root: 2 tsp (chopped)
  • Chili paste: 2 Tbsp
  • ground turmeric: 0.5 tsp
  • cooked chicken breast: 1 pound (chopped)
  • quart chicken broth: 1 piece
  • celery: 1 cup (chopped)
  • soy sauce: 0.25 cup
  • sugar: 2 tsp
  • ramen noodles: 1 pack (3 ounce pack)
  • lettuce: 1 cup (shredded)
  • green onion: 0.5 cup (chopped)

  1. Heat sesame oil in a large pot over medium heat. Add ginger, chile paste, and turmeric; cook and stir until fragrant, 1 to 2 minutes.
