This Chinese chicken soup with ramen noodles is spiced with turmeric, ginger, and chile paste. A filling and delicious way to use leftover chicken.
Ingredients
- sesame oil: 2 Tbsp
- fresh ginger root: 2 tsp (chopped)
- Chili paste: 2 Tbsp
- ground turmeric: 0.5 tsp
- cooked chicken breast: 1 pound (chopped)
- quart chicken broth: 1 piece
- celery: 1 cup (chopped)
- soy sauce: 0.25 cup
- sugar: 2 tsp
- ramen noodles: 1 pack (3 ounce pack)
- lettuce: 1 cup (shredded)
- green onion: 0.5 cup (chopped)

Heat sesame oil in a large pot over medium heat. Add ginger, chile paste, and turmeric; cook and stir until fragrant, 1 to 2 minutes.
