Ingredients
- chicken thighs, bone in: 4 pound (skin removed)
- water: 10 cups
- medium onion: 1 piece (chopped)
- barley: 0.33333 cup
- condensed chicken broth: 1 can (10.5 ounce can)
- medium leeks: 7 piece (sliced)
- stalks celery, thickly: 2 piece (sliced)
- fresh parsley: 1 Tbsp (chopped)
- salt: 1 tsp
- ground black pepper: 0.5 tsp
- sprig fresh thyme: 1 piece (chopped)

Place chicken into a large pot; pour in water and add onion and barley. Bring to a boil over high heat, then reduce the heat to low and simmer for 1 hour.

Use tongs to transfer chicken to a cutting board. Discard skin and bones; chop meat into bite-sized pieces and return to the pot.
