A sweet yet spicy salsa made with cucumbers and cantaloupe, perfect for summer snacking.
Ingredients
- garden cucumber: 1 piece (peeled and diced)
- cantaloupe: 0.5 piece (seeded and diced)
- red onion: 0.5 cup (chopped)
- jalapeño pepper: 1 piece (seeded and finely chopped)
- lemon: 1 piece (juiced)
- fresh cilantro: 2 Tbsp (chopped, plus more as needed)
- extra-virgin olive oil: 1 Tbsp
- Salt: 1 tsp
- Freshly ground black pepper: 1 tsp

In a medium bowl, mix together the cucumber, cantaloupe, red onion, and jalapeño.
