This corn salsa with bell pepper, jalapeño, and red onion tastes great and is really colorful. I threw this recipe together when I needed something quick and easy for a Mexican-themed birthday party and it got rave reviews!
Ingredients
- sweet corn: 1 can (15.25 ounce can, drained)
- orange bell pepper: 1 piece (chopped)
- red onion: 1 piece (chopped)
- jalapeño pepper: 1 piece (minced)
- fresh cilantro: 1 Tbsp (to taste, chopped)
- lime juice: 1 Tbsp (to taste, fresh)
- honey: 1 tsp
- red pepper: 0.5 tsp (crushed)
- salt and black pepper: (to taste)
