This corn salsa with bell pepper, jalapeño, and red onion tastes great and is really colorful. I threw this recipe together when I needed something quick and easy for a Mexican-themed birthday party and it got rave reviews!

Ingredients

  • sweet corn: 1 can (15.25 ounce can, drained)
  • orange bell pepper: 1 piece (chopped)
  • red onion: 1 piece (chopped)
  • jalapeño pepper: 1 piece (minced)
  • fresh cilantro: 1 Tbsp (to taste, chopped)
  • lime juice: 1 Tbsp (to taste, fresh)
  • honey: 1 tsp
  • red pepper: 0.5 tsp (crushed)
  • salt and black pepper: (to taste)
