This cowboy caviar recipe is a yummy Texas salad made with black beans and pinto beans instead of black-eyed peas. Serve with scoop-style tortilla chips as a great party appetizer.

Ingredients

  • black beans: 2 cans (15 ounce cans, drained)
  • pinto beans: 2 cans (15 ounce cans, drained)
  • white corn: 2 cans (15 ounce cans, drained)
  • green Chilis, undrained: 1 can (4 ounce can, chopped)
  • red bell pepper - cored, seeded and: 1 piece (chopped)
  • green bell pepper - cored, seeded and: 1 piece (chopped)
  • red onion: 1 piece (chopped)
  • jalapeno Chili pepper, seeded and: 1 piece (chopped, optional)
  • bunch cilantro leaves: 1 piece (chopped)
  • rice vinegar: 0.5 cup
  • olive oil: 0.5 cup
  • white sugar: 0.33333 cup
  • garlic powder: 0.5 tsp
