A carrot soufflé as good as your favorite restaurant makes!

Ingredients

  • ¾ pounds carrots: 1 piece (chopped)
  • white sugar: 1 cup
  • ½ teaspoons baking powder: 1 piece
  • ½ teaspoons vanilla extract: 1 piece
  • all-purpose flour: 2 Tbsp
  • eggs: 3 piece (beaten)
  • margarine: 0.5 cup (softened)
  • confectioners' sugar: 2 tsp

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Bring a large pot of water to a boil. Add carrots and cook until very tender, 7 to 10 minutes. Drain and transfer to a large mixing bowl.
