Stages of cooking
-
Rinse bananas first. Peel them lightly, remove the black spots and keep the peels as they are. Slice them into thin rounds and place in a bowl with water plus a bit of salt, so that they don’t get darkened.
-
Heat vegetable oil in a frying pan. Reduce the flame to a low or medium and add mustard seeds. Saute until the mustard seeds crackle.
-
Then add curry leaves and asafoetida. Stir carefully.
-
Now add sliced bananas.
-
Mix bananas with the rest of tempered ingredients.
-
Add red chili powder, coriander powder and turmeric powder. Mix the spice powders very well with banana slices.
-
Spread banana slices on the pan in a way, so that they get cooked evenly. Don’t cover with any lid and saute the bananas on a low flame. Turn slices and cook the sides which looks uncooked.
-
Cook until the slices become crisp towards the edges (not all), when banana slices are cooked, sprinkle salt and mix well.
-
Add chopped coriander leaves and mix.
-
Serve raw fried bananas with sambar–rice or rasam-rice. Enjoy the dish!
