This healthier version of Sloppy Joes includes more veggies and real garlic. Be sure to serve on whole wheat buns!
Ingredients
- lean ground beef: 1 pound
- carrots: 2 piece (chopped)
- onion: 0.25 cup (chopped)
- green bell pepper: 0.25 cup (chopped)
- garlic: 2 clove (minced)
- ketchup: 0.75 cup
- brown sugar: 1 Tbsp
- prepared yellow mustard: 1 tsp
- salt and ground black pepper: (to taste)

Heat a large skillet over medium-high heat. Add beef, carrots, onion, bell pepper, and garlic; cook and stir until beef is browned and crumbly, about 10 minutes. Drain off liquids.

Mix in ketchup, brown sugar, and mustard until thoroughly combined. Reduce the heat to low and simmer until sauce has thickened, about 30 minutes. Season with salt and pepper.
