This vegetable casserole - Moussaka came to us from the Mediterranean and Balkan countries, and there are a lot of types of cooking. The main ingredient of this dish is eggplants, which can be baked with minced meat or other vegetables. We offer to try this easy healthy casserole recipe with the addition of finely chopped potatoes and spinach leaves, thanks to which it turns out to be very tender and light.
Ingredients
- eggplant: 400 g
- potato: 400 g
- salt: 1 Tbsp
- tomatoes: 150 g
- garlic: 5 clove
- spinach: 1 bunch
- olive oil: 45 ml
- tomato juice: 100 ml
- black pepper: 1 pinch

Prepare the ingredients. Turn on the oven to warm up to 200 degrees, wash all the vegetables and spinach.

Cut eggplants lengthwise into 1 cm thick slices, sprinkle with salt and leave for 20 minutes to let them juice. After 20 minutes, rinse them with water. Peel potatoes and garlic, cut off roots from spinach.

Cut potatoes, garlic and tomatoes into thin slices.

Eggplant, spinach, potatoes and garlic are layered in layers. Repeat in the same sequence again. Salt and pepper potato layers.

Finish with tomatoes, pour olive oil on top.

Sprinkle tomatoes with tomato juice. Bake in the middle of an oven preheated to 200 degrees for 45-50 minutes.
