This is a superb lemon frosting and does not take long to make.

Ingredients

  • unsalted butter, at room temperature: 0.5 cup
  • lemon juice: 2 Tbsp
  • vanilla extract: 0.5 tsp
  • confectioners' sugar: 3 cups

  1. Combine butter, lemon juice, vanilla, and confectioners' sugar in a large mixing bowl and beat until light and fluffy. Add more confectioners' sugar, or lemon juice to adjust the consistency as needed.
