Fava beans are sweet, tender, and pleasantly starchy. This recipe is vegan, versatile, and delicious! Use these on toast, bruschetta, or salads.
Ingredients
- fava bean pods: 1 pound (fresh)
- red wine vinegar: 0.25 cup
- extra-virgin olive oil: 0.25 cup
- chopped fresh parsley: 2 Tbsp
- garlic: 2 clove (minced)
- salt: 0.5 tsp
- red pepper flakes: 0.25 tsp

Bring a pot of salted water to a boil over high heat. Break open each bean pod to remove the beans. Drop the beans into the boiling water and blanch for 30 to 60 seconds. Immediately drain the beans and submerge them in a bowl with ice water. The process of blanching ensures that the beans stay green and fresh. Drain the beans again and use your fingers to squeeze each bean and remove the skin.

In a 1-pint glass jar, combine the vinegar, olive oil, parsley, garlic, salt, and red pepper flakes and shake well. Place the fava beans in the jar, seal tightly, and shake to combine. Refrigerate for at least 24 hours before serving.
