Vegetal fava beans shine in this spring-inspired bruschetta, complemented by garlic, fresh mint, and lemon. Although the preparation of these beans can be tedious, the mashed fava beans are lusciously creamy and delicious.
Ingredients
- Italian bread or baguette: 12 piece (sliced (½ -inch))
- extra-virgin olive oil: 1 Tbsp
- garlic: 2 clove (minced)
- lemon: 1 piece (Juice of 1 lemon)
- fresh mint: 0.25 cup (chopped)
- salt: 0 tsp
- freshly ground black pepper: 0 tsp

Turn the broiler on high.

Place the bread slices on a baking sheet. In a small bowl, mix together the olive oil and garlic. Brush the mixture onto the bread. Broil for 2 to 3 minutes, or until lightly toasted.

Transfer the fava beans to a bowl using a slotted spoon. Squeeze in the lemon juice and mash the beans with a fork. Depending on how tender the beans are, they will be more or less difficult to mash. For a creamier mash, pulse the beans in a food processor with the lemon juice instead.

Spread a spoonful of the fava mash on the toasted bread. Top with the mint and season with salt and pepper.
