Quickly cooked uttapams are ideal for a breakfast, you may make them either plain or topped with onions, tomatoes or mixed grated veggies.
Ingredients
- oil: 1 Tbsp
- salt: 1 pinch (per taste)
- baking powder: 0.5 tsp
- lemon juice: 3 Tbsp
- water: 0.5 cup
- rava: 100 g
- tomatoes: 1 piece (small)
- green chili pepper: 1 piece
- onion: 1 piece (small)

Take rava and add water, mix well and keep the batter to rest for 30 minutes. You can even keep the batter for an hour.

Meanwhile, when the batter is resting, you can slice or chop the onions, tomatoes and green chilies.

Mix the chopped veggies and keep aside.

After 30 minutes, stir the batter again.

Then add 3 tsp lemon juice, season with salt and mix well.

Next add baking powder. If you add less baking powder, the uttapam will be less light and soft. Stir and again mix very well.

Heat a tawa and spread some oil. Take the batter in a large serving spoon.

Pour the batter and spread it gently, don’t spread too much.

When the batter is still raw on the top, quickly add the onions-tomatoes-green chilies mix.

When the base is cooked and lightly browned, flip gently. Cook till the onions and tomatoes are light golden or golden. Flip and serve hot.
