Mediterranean salmon baked in foil… The name of this dish sounds really tempting and very delicious. And it really is! The dish is easy to cook and involves lots of spices and herbs that give it the unforgettable Mediterranean aroma!
Ingredients
- salmon: 2 piece (steaks)
- rosemary: 1 bunch
- thyme: 3 bunch
- basil: 2 bunch
- parsley: 4 bunch
- black olives: 8 piece
- lemon: 0.5 piece
- chili pepper: 0.3 piece
- white onion: 0.5 piece
- garlic: 1 clove
- cherry tomatoes: 4 piece
- white pepper: 1 pinch (powdered)
- tomato paste: 0.5 tsp
- sun-dried tomatoes: 2 piece
- olive oil: 2 Tbsp

Wash the herbs and dry them using paper towels. Separate the leaves from the branches.

Chop the leaves, garlic and onion and mix these ingredients well.

Pour hot boiling water on the lemon and slice it into thin circles.

Wash salmon steaks and dry them with paper towels. Make sure there are no bones left in the fish.

Chop chili pepper and dried tomatoes. Add 2 tablespoons of olive oil and the chopped herbs. Mix the ingredients well once again.

Cut 2 large pieces of foil and fold them into two parts. Put several pieces of lemon in the middle of each foil piece. Spoon 1-1.5 teaspoons of the sauce above the lemon. Put the salmon steak on each piece of foil, spread a thin layer of tomato paste above and dredge with powdered white pepper.

Slice cherry tomatoes and black olives into thin circles. Spoon several teaspoons of the sauce above the salmon, put 2 slices of lemon, cherry tomatoes and black olives.

Wrap the salmon into foil, leaving a few centimeters under the cover for better air circulation. Bake in the pre-heated to 200 C (392 F) oven for about 25 minutes. Remove the ready-made salmon from the oven, but do not open it for 5-10 minutes more.
