My parents ate at a diner that served a pineapple coleslaw, and my Dad has tried to mimic it. This is me mimicking his imitation!
Ingredients
- medium head green cabbage: 1 piece (chopped)
- pineapple - peeled, cored, and: 1 piece (cut into small pieces, fresh)
- green onions: 4 piece (chopped)
- bell pepper: 1 piece (chopped)
- white vinegar: 0.33333 cup
- mayonnaise: 0.25 cup
- white sugar: 1 Tbsp
- salt: 1 tsp
- ground black pepper: 0.25 tsp

Mix cabbage, pineapple, green onions, and bell pepper together in a large bowl.
