My parents ate at a diner that served a pineapple coleslaw, and my Dad has tried to mimic it. This is me mimicking his imitation!

Ingredients

  • medium head green cabbage: 1 piece (chopped)
  • pineapple - peeled, cored, and: 1 piece (cut into small pieces, fresh)
  • green onions: 4 piece (chopped)
  • bell pepper: 1 piece (chopped)
  • white vinegar: 0.33333 cup
  • mayonnaise: 0.25 cup
  • white sugar: 1 Tbsp
  • salt: 1 tsp
  • ground black pepper: 0.25 tsp

  1. Mix cabbage, pineapple, green onions, and bell pepper together in a large bowl.
