This not-too-sweet pumpkin seed granola is sugarless, sweetened only with sugar-free, maple-flavored syrup. A great alternative for special diets!

Ingredients

  • raw pumpkin seeds: 1 cup
  • ½ cups rolled oats: 1 piece
  • pumpkin puree: 0.5 cup
  • sugar-free maple-flavored syrup: 0.5 cup
  • coconut: 0.25 cup (shredded)
  • unsalted butter: 2 Tbsp (melted)
  • pumpkin pie spice: 0.5 tsp
  • ground cinnamon: 0.5 tsp
  • salt: 0.25 tsp

  1. Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.

  2. Mix pumpkin seeds, oats, pumpkin puree, maple-flavored syrup, coconut, butter, pumpkin pie spice, cinnamon, and salt together in a bowl until well combined. Spread mixture evenly over the prepared baking sheet.
