  • russet potatoes: 2 pound
  • mayonnaise: 1 cup
  • sweet pickle relish: 4 tsp
  • white sugar: 4 tsp
  • white onion: 2 tsp (chopped)
  • prepared mustard: 2 tsp
  • white wine vinegar: 1 tsp
  • celery: 1 Tbsp (minced)
  • pimento: 1 tsp (minced)
  • carrot: 0.5 tsp (shredded)
  • parsley: 0.25 tsp (dried)
  • ground black pepper: 0.25 tsp
  • salt: (to taste)

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and chop.
