Ingredients
- russet potatoes: 2 pound
- mayonnaise: 1 cup
- sweet pickle relish: 4 tsp
- white sugar: 4 tsp
- white onion: 2 tsp (chopped)
- prepared mustard: 2 tsp
- white wine vinegar: 1 tsp
- celery: 1 Tbsp (minced)
- pimento: 1 tsp (minced)
- carrot: 0.5 tsp (shredded)
- parsley: 0.25 tsp (dried)
- ground black pepper: 0.25 tsp
- salt: (to taste)

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and chop.
