This was and is my favorite casserole. I hope you enjoy this 7-layer dinner as much as my family does. Great warmed up the next day.
Ingredients
- potatoes: 3 piece (sliced)
- carrots: 3 piece (sliced)
- onion: 1 piece (sliced)
- uncooked long-grain rice: 0.5 cup
- peas, with liquid: 2 cans (8 ounce cans)
- condensed tomato soup: 1 can (10.75 ounce can)
- water: 1 can (10.75 ounce can)
- pork sausage: 1 pound
- salt and pepper: (to taste)

Preheat the oven to 350 degrees F (175 degrees C). Butter a large casserole dish.

Layer potatoes, carrots, and onions in the prepared casserole dish. Sprinkle uncooked rice over vegetables. Add peas (with liquid) and arrange pork sausage on top.

Dilute tomato soup with a can of water; pour over sausage. Season with salt and pepper.

Bake, covered, in the preheated oven for 1 hour. Uncover and continue baking for an additional hour.
