Great salad with chicken, avocado, and goat cheese.

Ingredients

  • pine nuts: 0.25 cup
  • spinach: 8 cups (chopped)
  • cherry tomatoes: 1 cup (halved)
  • ½ cups chopped cooked chicken: 1 piece
  • avocado: 1 piece (sliced)
  • corn kernels: 0.5 cup
  • crumbled goat cheese: 0.33333 cup
  • white wine vinegar: 3 Tbsp
  • extra-virgin olive oil: 2 Tbsp
  • Dijon mustard: 1 Tbsp
  • pinch salt and ground black pepper: 1 piece (to taste)

  1. Heat a small skillet over medium-high heat. Toast pine nuts in hot skillet until lightly browned and fragrant, 3 to 5 minutes.
