Spring pea and mint soup tastes very refreshing and unusual. This is not to mention its green saturated color that makes it stand it from the crowd. What’s more, the soup is gluten-free and very healthy! A great choice for vegans and those people, who take care of their health!
Ingredients
- onion: 1 piece
- vegetable oil: 3 Tbsp
- green peas: 6 cup (fresh or thawn)
- lemon: 1 piece
- mint: 1 bunch (small and fresh)
- salt: 1.5 tsp

Peel and chop one large onion.

Take a deep frying pan, add 3 tablespoons of vegetable oil and heat it on medium heat. Then add chopped onion and sauté it for about 4-5 minutes until the onion becomes transparent.

Now, add thawn or fresh green peas and 5 cups of water. Wait until the peas start boiling, reduce the heat a bit and keep simmering for about 6-7 minutes. Do not cover the pot.

While the peas are boiling, rinse and chop mint. Then juice the lemon.

As soon as the peas are ready, puree them using an immersion blender. Then add chopped mint, fresh lemon juice and salt. Serve your soup warm or cold. Decorate with lime slices and mint leaves. Enjoy!
