This is a refreshing summer salad. Perfect for a picnic or barbeque. I usually serve it with a spicy flank steak and potatoes.

Ingredients

  • red wine vinegar: 0.33333 cup
  • white sugar: 1 Tbsp
  • salt: 1 tsp
  • cucumbers, peeled, seeded, and: 2 piece (cut into 1/2 inch slices)
  • tomatoes: 3 piece (chopped)
  • red onion: 0.66667 cup (chopped)
  • fresh mint: 0.5 cup (chopped)
  • olive oil: 2 Tbsp
  • salt and pepper: (to taste)

  1. In a large bowl, combine vinegar, sugar, and salt. Mix in cucumbers, and marinate 1 hour, stirring occasionally.
