It only takes a short time to assemble these air fried shrimp tacos with the help of an air fryer. Oh and did you know the shell on a shrimp is edible?! That's something my fishmonger told me! I wasn't brave enough to try it, but feel free to, if you want!
Ingredients
- extra large shrimp (16-20 per lb.), shell on, deveined: 1 pound
- vodka: 0.25 cup
- orange juice: 0.25 cup
- garlic: 2 clove (minced)
- ground cumin: 1 tsp
- ground coriander: 0.5 tsp
- smoked paprika: 0.5 tsp
- paprika: 0.5 tsp
- cayenne pepper: 0.25 tsp
- lettuce: 1 pack (5 ounce pack, finely chopped)
- tortillas, warmed: 6 piece (6 inch)
- chopped cilantro: 0.25 cup (fresh)
- red bell pepper: 1 piece (chopped)
- bunch chopped green onions, white parts only: 1 piece
- crema con sal (salted Mexican-style sour cream): 3 Tbsp
- Mexican cheese blend: 0.25 cup (to taste, shredded)

Combine vodka, orange juice, garlic, cumin, coriander, smoked paprika, paprika, and cayenne in a resealable plastic bag. Add shrimp and marinate for 20 minutes.

Preheat an air fryer to 400 degrees F (200 degrees C) for 5 minutes.

Drain off marinade and air-fry shrimp for 6 minutes.

Divide chopped salad amongst tortillas. Add cilantro, bell pepper, and the white parts of the green onion. Roughly chop shrimp (optional) and add to the tacos. Top with crema con sal and cheese.
